Delicious chicken stew is a traditional recipe you can make from scratch. The flavors suit all taste buds, just like grandma’s food.

Delicious chicken stew in grandma’s sauce

Ingredients

  • 1 whole chicken, divided (approx. 2.5 kg)
  • 1 laurel twig
  • Salt (to taste)
  • 1 garlic
  • A little olive oil
  • Black pepper (to taste)
  • 1 cup white wine (250 ml)
  • 1 cube with chicken broth (1 gram)

Approach:

  1. First, it is important that the chicken is cleaned and divided. If you do not want to use a whole chicken, you can make this dish with only chicken thighs. The thighs are one of the juiciest parts of the chicken.
  2. Once the chicken is split and cleaned, add a dash of olive oil in a saucepan and heat up. When hot, add the garlic cloves and bay leaf. Let it cook for 1 to 2 minutes before adding the divided chicken. Add salt and pepper. Let everything cook until the chicken is brown on all sides.
  3. To prevent the garlic from being burnt, but at the same time give off all the taste, a smart trick is to put the cloves in the pot with the skin on and make some deep cuts in them.
  4. Once the chicken has taken on color, add wine and some water. To make the pot properly, the bag should cover the chicken halfway.
  5. Then crumble the bouillon cube over the dish. Stir a little and continue to simmer over low heat with a lid until the sauce is reduced and thickened.
  6. Finally, this chicken stew is ready without the use of complicated ingredients. You can serve it in a bowl with fried potatoes or rice. Garnish  by sprinkling some fresh herbs over it.

Delicious chicken stew with vegetables

As a variation on the previous recipe, the following is another way to prepare a delicious chicken stew. This is still very traditional, but also contains some vegetables.

Ingredients

  • 1 whole chicken (approx. 2 kg)
  • 1 onion
  • 2 garlic cloves
  • 1 red pepper
  • 1 cup crushed tomatoes (250 ml)
  • 2 bay leaves
  • 1 green pepper
  • 1 teaspoon chopped parsley (3 g)
  • 1/2 cup white wine 125 (ml)
  • 1 cube with chicken broth
  • 4 cups water (1 liter)
  • Extra virgin olive oil (to taste)
  • Salt and pepper (to taste)

Approach

  1. First, split the chicken and take care of the breasts and thighs.
  2. At the same time, make chicken stock with the bouillon cube.
  3. When the power is done, put in the chicken and let it cook for approx. one hour over low heat.
  4. Afterwards, salt the chicken and put it in another pot together with olive oil. Brown it quickly on all sides.
  5. When the chicken has gained some color, remove it from the pan and turn down the heat. In the same oil, add the onion, paprika and garlic. Fry for approx. 5 minutes.
  6. Then add the crushed tomatoes and bay leaves, stirring well. Then let it boil for approx. 10 min.
  7. When the tomatoes have been reduced by half, add white wine and let the liquid reduce again.
  8. When the mixture is ready, add the chicken pieces and make sure they are completely covered in sauce. Then let it cook over medium heat for approx. 40 min. until the chicken is tender.
  9. Once the chicken is tender, the second variant of this traditional chicken stew is done! You can serve it with vegetables, and garnish with a little chopped parsley sprinkled over the dish.
